People seem to really enjoy the cakes we make for West Chiltington Village Show so we have decided to share some of our favourite recipes with you in our new little recipe book “Simply Scrumptious”.

The book has 61 pages featuring large and small cakes, scones, biscuits and tarts, many of them illustrated in full colour with full instructions and helpful tips . It is printed on quality A5 paper and ring bound with laminated covers.

Banana Muffins

200g/7oz caster sugar

50g/9oz self-raising flour

120ml/4fl oz vegetable oil

1 large egg

4 ripe bananas (medium)

1tsp bicarbonate of soda

½ tsp fine sea salt

½ tsp ground cinnamon

Large pinch of nutmeg

Line muffin tin with cases and preheat oven to 180c/Fan 160c/Gas 4. Put sugar, oil and egg into a large mixing bowl and beat until creamy. Peel and mashed all the bananas and add to the mixture. Sieve flour as this will help making the muffins lighter when baked.  Add flour, ground cinnamon, nutmeg and bicarbonate of soda to the banana mixture. Fold in until all ingredients are mixed well together. Spoon mixture carefully into each case, ¾ way up, leaving room for the mixture to rise. Bake in oven for 35 minutes, insert a skewer in the centre of one of the muffins, if it comes out clean then the muffins are ready, otherwise leave inside the oven for a couple more minutes allowing them to bake through.
